WHAT IS KOMBUCHA?

Kombucha is a beverage that is fermented from a strong sugar tea inoculated with a symbiotic colony of bacteria and yeast (or SCOBY), which feeds off the sugar and tannins found in most teas. The history of kombucha dates back thousands of years with a known history in Asia and Russia. Like many fermented and raw foods, kombucha is knows to have many health benefits (with no supporting studies by the scientific community to confirm such benefits, yet). Kombucha is said to have the following benefits:

  • Probiotics - Kombucha is full of probiotics similar to that of yogurt and other fermented cultures, which can positively impact gut flora and the overall immune system.

  • Antioxidants - Kombucha, being comprised of teas known to have antioxidants (green tea), is similarly antioxidant rich.

  • Detoxification - Kombucha being of a low PH and thus high acidity is an excellent detoxifier, which helps support healthy liver function

  • Rich in vitamins and enzymes - Like other raw foods, Kombucha is rich in enzymes and B vitamins that provide support for the bodies metabolic functions, including increased energy. Kombucha is a natural energy booster, the original energy drink.

WHAT MAKES KTONIC KOMBUCHA DIFFERENT THAN MOST OF YOUR COMPETITORS?

Most kombucha companies offer a diluted product that is higher in sugar in an effort to make the product more attractive to the market. This typically is a result from adding sugar in the form of fruit juice at the end of the primary brewing cycle or with a second fermentation. KTonic Kombucha derives its flavor from carefully select organic teas, herbs and botanicals that is completely unadulterated and is 100% kombucha.

I HAVE SENSITIVITY TO ALCOHOL OR I'M AN ALCOHOLIC. SHOULD I DRINK KOMBUCHA?

No one with alcohol sensitivities or an alcoholic addiction should drink any type of kombucha. ALL kombucha contains trace alcohol unless it is a pasteurized product (AKA, not kombucha). There are kombucha companies that claim to be alcohol free, those companies aren’t producing a fermented product. Always consult your physician if you have questions and concerns about consuming kombucha or any fermented foods.

I am sensitive to caffeine. how much caffine does your kombucha have?

All real kombucha will have some residual caffeine, so if you are highly sensitive to caffeine, you may want to limit your consumption as directed by your physician or dietician. Caffeine is a naturally occurring compound in the tea plant Camellia Sinensis, which is used in most traditional kombucha brewing. It is also part of the “food” and a key ingredient in the fermentation of kombucha. A recent lab result shows that our kombucha has 17mg of caffeine per 8 oz. serving. For reference, the same serving size of drip coffee has 91mg as well as green tea with 35mg. This handy chart also has other caffeine comparisons.

WHERE DOES KTONIC GET THEIR INGREDIENTS FOR ITS KOMBUCHA?

KTonic is proud to get its USDA organic tea locally from Zhi Tea, USDA organic herbs and botanicals from a variety of sources, including Starwest Botanicals and HerbCo. KTonic uses USDA organic cane sugar that is fair trade and non-GMO. KTonic makes every effort to source its ingredients responsibly and locally in an effort to support Austin-area and Texas-based businesses. 

What accounts for the change in your nutrition facts?

The kombucha industry is constantly challenged in order to remain compliant as a non-alcoholic (NA) kombucha provider. Since 2022, KTonic has worked with a certified lab to examine and refine its brewing process in an effort to maintain compliancy with the Alcohol and Tobacco Tax and Trade Bureau (TTB). The simple science behind the use of sugar in fermentation is that it is a food source for the live cultures and yeast that are in all traditionally made kombucha. At the end of the fermentation process, the sugar will be consumed, and any residual sugar will remain in the bottle (our current formula has a remaining 5g per 8oz serving). The remainder converts to create beneficial acids and bacteria, as well as a trace amount of kombucha that remains below the TTB’s .5% limit.
